Qiaojiao Beef (跷脚牛肉) is a popular dish in Leshan, Sichuan. It is famous for its good taste and funny name. There is a story about how this Chinese dish got its name.
The first person to cook Qiaojiao Beef was an old doctor. At one time, poor (贫穷的) people didn’t have money to buy any meat to eat. The doctor found that some people killed the cows only to eat their meat, but they didn’t eat other things, like intestines (肠) and stomachs (胃). So the doctor asked people for those things. He washed them and cooked them in the hot soup with some herbal medicines (草药). The soup was delicious and could help people keep healthy. Then the doctor made the dish for the poor for free.
